Professional kitchens are places of heat, activity and barely controlled chaos. Tempers can rise along with the temperature and explosions of sudden violence are not rare. Despite all the modern equipment, cooking remains a very physical and hands-on business full of boiling and butchery. A busy kitchen is a highly visual factory as the raw materials of food, often highly textured and coloured, are transformed into the careful tableaux on plates that are carried away to the table.
