There are far fewer butchers on the high street nowadays.  The big supermarkets have taken much of their trade and the rise in vegetarianism hasn't done them much good either.  Some survive by switching to organic meat for those that can afford it, while there are also growing markets for halal and other "ethnic" specialities.  There are still horse butchers over in France, though they also are in decline.  Meat may in some circles be politically incorrect, but a good roast is hard to beat for Sunday lunch in chilly January. These ten pictures were taken in Brighton, London, Cornwall and Normandy between 1989 and 2004.
