Summer is the season of outdoor cooking. In gardens and on beaches, millions of men stand by their barbecues, cheerfully incinerating bits of meat and asphyxiating their neighbours. There is another way of doing it, however, and this week's pictures feature an outdoor kitchen that has recently been serving delicious Spanish and vegetarian food at festivals in Brighton and Hay-on-Wye. Elena and Gordon Elliot, together with their family and assistants, cook pans of paellas in both traditional and inventive styles. Fresh herbs, garlic, nuts and raisons are used in profusion. The results are healthy, colourful and very tasty. Feeding hundreds of people in this way is also very hard work chopping vegetables and moving heavy pans and gas cylinders, not to mention all that washing up afterwards.
