Cooks and cooking

The heat in kitchens is proverbially hot and the people who work in them have little choice but to stand it. It's not surprising that there's an atmosphere of barely controlled violence behind the scenes in many restaurants. That said, most chefs love their work and their kitchens are full of life and activity. This week's picture feature looks at this world and has ten interesting images taken in Brighton, Southampton and Sussex between 1997 and 2003.
